Frequently traveled Spain and, newly discovered Portugal are experiencing a rediscovery of: forgotten grape varieties of old age vines, abandoned vineyards restored, nearly forgotten methods of wine making, resurrected; mostly by traditional or young innovative wine growers. Many employing sustainable agriculture, Certified Organic or Biodynamic practices in the vineyards and winery. Thus, resulting in wines that are more natural with less intervention, expressive of the place vines are grown, fermented and matured — what the French term “terroir”. Explore these wines with us for a 2-day Seminar consisting of different wines each Seminar day.
Candela Prol has 20 years experience working in the wine industry, though she began her career in the kitchen, graduating Cum Laude from Johnson & Wales University’s Culinary Arts College and working several years as a cook and pastry chef in Rhode Island.
Candela was the sommelier at Pier House Hotel, the wine director and educator of Louie’s Backyard Restaurant, both in Key West, Fla. and a consultant for Fatfish Restaurant in Bayshore, N.Y.
